RECIPE: Middle Eastern Couscous

Cooking time: 10 min

Ingredients:

2 cups water or chicken stock
1 cup couscous
2 tbsp slivered almonds
1-1/2 tsp cumin seed
3/4 tsp coriander seed, ground
1/4 cup raisins
1-1/3 tbsp olive oil
3/4 cup scallions, sliced

Cooking Directions:

Bring stock to a boil in a heavy saucepan. Stir in couscous. Cover saucepan and remove from heat. Let sit 10 minutes. Heat oil in a heavy nonstick skillet over medium heat. Sauté scallions 5 minutes, stirring frequently. Stir in remaining ingredients and salt and pepper to taste. Sauté another 2 minutes. Using a fork, fluff couscous and stir into scallion mixture. Stir until mixture is hot.
