RECIPE: Cranberry Gingerbread with Whipped Cream

Preparation time: 20 min Servings: 16
Cooking time: 50 min

Ingredients:

1 cup buttermilk
1-1/2 tsp vanilla extract
2-1/2 tsp ground cinnamon
1/3 cup dark brown sugar, packed
3/4 tsp baking soda
2 large eggs
1 cup whipping cream, chilled
1/3 cup sour cream, chilled
1-1/2 tsp baking powder
1/3 cup chopped crystallized ginger
2-1/2 cups cranberries, coarsely chopped in processor
3 cups all purpose flour
3/4 tsp salt, (necessary)
1-1/2 tsp ground ginger
3/4 cup unsalted butter, room temperature
3/4 tsp ground allspice
1/4 tsp ground cloves, ground
1 cup unsulphured molasses
3/4 cup dark brown sugar, packed firmly 
 

Cooking Directions:

Preheat oven to 350°F. Butter and flour a 9x13 in. glass baking dish. Sift first 8 ingredients into a bowl. Beat butter in another bowl with an electric mixer until light. Add sugar and beat until fluffy. Beat in eggs 1 at a time. Add molasses and mix thoroughly. Mix in dry ingredients alternately with buttermilk, beginning and ending with dry ingredients. Fold in cranberries and crystallized ginger. Spread batter into baking dish and bake about 50 minutes, or until a tester comes out clean when inserted in center. Cool cake in pan on a rack. Combine remaining ingredients in a chilled bowl. Beatwith chilled beaters until peaks form. (Can be prepared 4 hours ahead. Cover and refrigerate.) Serve gingerbread warm or at room temperature with brown sugar whipped cream.
